smoked mozzarella stuffed lamb burger

Catch all that in the title?  
This recipe is exactly like it sounds. a lamb burger, stuffed with smoked mozzarella. 
Good smokiness from the cheese, juiciness from the lamb. 
Amazing ingredients call for a simple recipe.

This recipe is from Marc Bittman, of the New York Times, one of my favorites.  
He's pretty much the only person I can still watch on The Today Show without cringing.

Amazing when you're at the store and aren't sure what you want to make. 

You could easily use beef or turkey in place of the lamb, but I think the lamb makes it a little more "gourmet" and it's so juicy.  
I've loved lamb for burgers ever since I had April Bloomfield's burger from The Breslin.
Serve it up with your standard burger fixings or go Greek and add some tatziki!

Smoked Mozzarella Stuffed Lamb Burger
Serves:  4
Time:  20 minutes

  • 1 lb. ground lamb
  • 4 oz. smoked mozzarella cheese
  • kosher salt
  • fresh ground black pepper
  1. Heat grill or grill pan, over medium-high heat until hot.
  2. Put ground meat into a bowl and season with salt and pepper. Divide into fourths.
  3. Cut smoked mozzarella into fourths and form meat into patties around each one.
  4. Grill burgers 3-4 minutes on each side for rare or to your desired done-ness. (Try not to flip them too frequently.  You want that good charred crust on the top and bottom.)
  5. Serve on buns (we love Martin's Potato Rolls) with fixings of your choice.
