mini pumpkin cupcakes with cream cheese frosting

After we decided to host our Emmy Watch Party, I went on the hunt for a small SEASONAL (ha, sorry Al) desert to serve after our bowls of chili.

Discovered these Mini Pumpkin Cupcakes on self.com and they were gone in minutes.
(Who would think to search a healthy lifestyle website for cupcake recipes?)

Mini Pumpkin Cupcakes with Cream Cheese Frosting

Makes 24 mini cupcakes

Cupcake Ingredients:
  • 1 C. all-purpose flour
  • 1/2 t. baking powder
  • 1/2 t. baking soda
  • 1 t. pumpkin pie spice
  • 1/4 t. salt
  • 1/2 C. granulated sugar
  • 4 T. butter, softened
  • 2 egg whites
  • 1/2 C. canned pumpkin puree
  • 1/4 C. skim milk
  • 1 t. vanilla

Frosting Ingredients:
  • 1 t. vanilla
  • 4 T. low fat cream cheese, softened
  • 1 T + 1 t.  trans-fat free margarine
  • 1/4 C. confectioners' sugar
  • 1/4 C. nonfat plain yogurt

Cupcake Directions:
  1. Heat oven to 350 degrees F.  Place mini muffin liners into mini muffin pan. 
  2. In a small mixing bowl, mix flour, baking powder, baking soda, pumpkin pie spice, and salt until combined.  Set aside.
  3. In a larger mixing bowl, beat sugar and butter until just combined.  Add in egg whites and combine. Beat in pumpkin, milk, and vanilla. 
  4. Slowly add dry ingredients and beat on low until just combined.
  5. Scoop batter into mini muffin pan about 1/2 to 3/4 of the way full.
  6. Bake until cupcakes spring back to the touch, 10 to 15 minutes.  Cool before frosting.

Frosting Directions:
  1. Beat cream cheese, margarine, and confectioners' sugar until smooth.  Add yogurt and vanilla. Beat until combined.  
  2. Frost once cupcakes are cooled.  (I used my pastry bag and piped a small rosette on each cupcake, after which Al taste tested some frosting as seen in the pictures).  
  3. Keep refrigerated until serving.
